Leveranciers
Aroma
De Europese aromawetgeving is in 2008 gewijzigd en is vanaf 21 januari 2011 van kracht. Als het om de etikettering gaat is er voor de levensmiddelenbedrijven niet direct iets veranderd. In de ingrediëntendeclaratie kan aroma nog gewoon als ‘aroma’ of als ‘aroma (specifieke smaak)’ worden opgenomen.
De leveranciers van en handelaren in aroma’s vermelden op hun specificaties meer ingrediënten. Ter verduidelijking, deze ingrediënten hoeven niet op het etiket van een consumentenproduct te worden vermeld.
Enkele deelnemers aan SpecsPlaza verhandelen aroma’s. Voor deze leveranciers is de lijst met uniforme ingrediëntenbenamingen uitgebreid, zodat deze bedrijven hun specificaties van aroma’s ook kunnen verwerken in SpecsPlaza.
Waaruit is een aroma opgebouwd?
Aroma: is het product (grondstof) zoals wordt verwerkt in consumentenproducten. In de ingrediëntenbenamingen in SpecPlaza zijn deze producten opgenomen als ‘aroma’, ‘aroma (vanille)’, ‘aroma (aardbei)’, etc. Hieraan is niets veranderd. Aroma bestaat uit aromatische bestanddelen en niet-aromatische bestanddelen.
Aromatische bestanddelen: deze bestaan uit (natuurlijke) aromastof en aromatiserend preparaat. Deze ingrediënten worden niet nader omschreven door een aromafabrikant om namaak te voorkomen.
Niet-aromatische bestanddelen: Dit zijn ingrediënten in een aroma die een technische functie hebben, zoals verdikkingsmiddel, voedingszuur, antiklontermiddel etc. De benamingen van deze hulpstoffen staan vermeld in de lijst met uniforme ingrediëntenbenamingen in SpecsPlaza.
De lijst met uniforme ingrediëntenbenamingen in SpecsPlaza is nu uitgebreid met de benamingen ‘aromastof’, ‘natuurlijke aromastof’ en ‘aromatiserend preparaat’. Dit zijn begrippen/benamingen die niet op een etiket van een consumentenproduct hoeven te worden genoemd, maar die alleen door een fabrikant van of handelaar in aroma’s worden gebruikt.
Voor bakkers
Verplicht of niet verplicht in SpecsPlaza?
Regelmatig krijgt SpecsPlaza vragen over het ontbreken van bepaalde gegevens in een specificatie. Wat is verplicht en wat niet?
Bij de start van SpecsPlaza is ervoor gekozen alleen die gegevens over een bakkerijgrondstof in SpecsPlaza op te nemen die noodzakelijk zijn om een juist etiket te kunnen samenstellen. Het betreft onder meer de gegevens over de ingrediënten waaruit een product is samengesteld en de wettelijke allergenen. Deze gegevens zijn in SpecsPlaza verplicht.
In 2008 is SpecsPlaza uitgebreid met een groot aantal gegevensvelden voor het uitwisselen van niet wettelijke productgegevens, zoals voedingswaarde, fysisch-chemische eigenschappen en levensovertuigingskenmerken (vegetarisch, biologisch, halal, etc.). Deze gegevens zijn in SpecsPlaza niet verplicht. In een aantal gevallen vullen leveranciers deze velden of een aantal van deze velden wel in. Soms is het invullen van deze velden een uitvloeisel van afspraken met bepaalde afnemers. Mist u bepaalde gegevens in een specificatie? Vraag uw leverancier dan de specificatie met de ontbrekende gegevens aan te vullen.

Flavouring
The European legislation relating to flavouring changed during 2008 and became effective on 21 January 2011. With respect to labelling, no direct changes apply to companies in the food industry. The ingredient declaration flavouring can still simply be listed as ‘flavouring’ or as ‘flavouring (specific flavour)’.
The flavouring suppliers and traders state more ingredients on their specifications. Please note that these ingredients do not need to be included on consumer product labels.
Some SpecsPlaza participants are flavouring traders. The list of uniform ingredient names was supplemented specifically for this group in order to enable these companies to process their flavouring specifications in SpecsPlaza.
What are the components of a flavouring?
Flavouring: Is the product (raw material) as processed in consumer products. The SpecsPlaza ingredient names include these products as ‘flavouring’, ‘flavouring (vanilla)’, ‘flavouring (strawberry)’, etc. This has not changed at all. Flavouring consists of flavouring components and non-flavouring components.
Flavouring components: These consist of (natural) flavouring substance and flavouring preparations. These ingredients are specified by flavouring manufacturers in order to prevent others from copying the flavouring.
Non-flavouring components These are ingredients in an flavouring with auxiliary function, including thickening agent, food acid, anti-caking agent etc. The names of these auxiliary substances are included in the list of uniform ingredient names in SpecsPlaza.
The list of uniform ingredient names in SpecsPlaza has now been extended with the titles ‘flavouring substance’ ‘natural flavouring substance’ and ‘flavouring preparation’. These terms / names do not need to be included on consumer product labels. Instead, these are intended only for flavouring manufacturers or traders.
For bakers
Mandatory or not in SpecsPlaza?
SpecsPlaza frequently receives questions regarding certain data missing in a specification. What is mandatory and what is not?
When SpecsPlaza was launched, we chose to include only the bakery ingredients data in SpecsPlaza that are required to create a compliant label. This concerns, among others, data on ingredients that the product consists of and the legally required allergens. These data are mandatory in SpecsPlaza.
During 2008, SpecsPlaza was extended with a large number of data fields for exchanging product details that are not legally required, including nutritional value, physical and chemical characteristics and life style characteristics (vegetarian, biological, halal etc.). These data are not mandatory in SpecsPlaza. In a number of cases, suppliers do complete some or all of these fields. Sometimes completing these fields is a consequence of agreements between manufacturers and certain customers. If you are missing certain details in a specification, then please contact your supplier and request him to complete the specification.
